Torteval Cheese
Fenella Maddison’s cheesemaking business couldn’t be more artisan. Each task is carried out by hand: fetching creamy Guernsey Dairy milk, pouring the curds and dry salting them, and pricking each cheese before a month-long ripening process. Called Fort Grey after the coastal tower on Fenella’s doorstep, this soft blue cheese is an island bestseller and international award winner.
